Hobotnica ispod peke po recepturi Ivana Pažanina

Kako pripremiti hobotnicu ispod peke po tradicionalnom receptu otkrio je poznati hrvatski chef Ivan Pažanin.

- 3 kg hobotnice
- 3 kg krumpira
- 3 paprike
- 3 dcl bijelog vina
- maslinovo ulje
- 3 mrkve
- 3 luka
- ružmarin
- lovorov list
- sol i papar
- češnjak

I naravno peka.


- Peku nauljite maslinovim uljem i posložite narezani krumpir.
- Dodajte mrkvu, papriku, luk, češnjak, sol i papar.
- Začinite maslinovim uljem.
- Hobotnicu stavite na vrh.
- Dodajte lovorov list i suhu grančicu ružmarina.
- Poklopite i stavite u peć.
- Poklopac peke prekrite žarom.
- Nakon 45 minuta izvadite peku i lagano promiješajte.
- Izlite višak tekućine, ako je ima i zalite bijelim vinom.
- Nakon dodavanja vina, poklopite peku i pecite još 30 minuta.
- Oprezno odstranite žar s poklopca i servirajte.
